- 1 cup Greek yogurt
- 2 eggs
- 1 cup mashed bananas
- 1 teaspoon vanilla extract
- 1 tablespoon honey (optional)
- 1 cup blueberries (fresh or frozen)
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
- In a mixing bowl, combine the oatmeal, baking powder, baking soda, and salt; stir until evenly mixed.
- In another bowl, mix the Greek yogurt, eggs, mashed bananas, vanilla, and honey until smooth.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Gently fold in the blueberries.
- Divide the batter evenly among the muffin cups.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Let cool for 5 minutes in the tin before transferring to a rack.
Notes
