- 2 pounds boneless skinless chicken breasts or thighs
- 2 cans (15 ounces each) white beans or great northern beans, drained and rinsed
- 1 can (14 to 15 ounces) diced tomatoes
- 1 small can (4 ounces) mild or hot green chiles
- 1 medium onion, chopped
- 3 to 4 cloves garlic, minced
- 2 cups chicken broth
- Chili powder, to taste
- Cumin, to taste
- Smoked paprika, to taste
- Salt and pepper, to taste
- Optional heat: jalapeno, cayenne, or hot sauce
- Finishers: lime juice and chopped cilantro
Instructions
- Add the chicken, beans, tomatoes, green chiles, onion, garlic, broth, and spices to the slow cooker.
- Cook on low for 6 to 8 hours or on high for 3 to 4 hours until the chicken is tender.
- Shred the chicken in the pot with two forks, and stir in lime juice and cilantro before serving.
- Serve with your favorite toppings such as cheese, avocado, and tortilla chips.
