Description

Ingredients

  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 cup milk
  • 1/2 cup melted butter
  • 1 tsp vanilla extract
  • 1 cup fresh or frozen blueberries

Instructions

  1. Preheat your oven to 400°F (200°C) and line a 12-cup muffin tin with paper liners.
  2. Whisk together the flour, baking powder, salt, and sugar in a large bowl.
  3. In another bowl, whisk the eggs, milk, melted butter, and vanilla extract.
  4. Pour the wet ingredients into the dry and stir gently until just combined, leaving small lumps.
  5. Fold in the blueberries gently, tossing with a teaspoon of flour if using frozen berries.
  6. Fill the muffin cups about three-quarters full for taller tops.
  7. Bake for 16-20 minutes until the tops spring back upon touch and a toothpick comes out mostly clean.
  8. Cool in the pan for 5 minutes before transferring to a rack to cool completely.

Notes

For a crunchy top, sprinkle sugar before baking or prepare a quick crumble. Replace some flour with whole wheat for a healthier option.
