- 1 tablespoon Additional cinnamon and sugar
Instructions
- Prep the pineapple: Start with a fresh pineapple, and slice it into rings. Supervise kids closely if they help.
- Mix dry ingredients: In a bowl, combine the flour, sugar, baking powder, salt, and cinnamon. Stir well.
- Incorporate wet ingredients: In another bowl, whisk together the egg and milk. Pour into the dry ingredients and mix gently.
- Heat the oil: In a large skillet, heat the vegetable oil over medium heat until hot but not smoking.
- Fry the fritters: Scoop batter into the hot oil, placing a pineapple ring in the center of each fritter. Fry for about 3-4 minutes per side.
- Drain and sugar: Remove fritters and place on a paper towel; sprinkle with cinnamon-sugar while warm.
- Serve warm: Enjoy fritters immediately, optionally with powdered sugar or honey.
