Ingredients

- 2 cups cooked rice
- 1 tablespoon vegetable oil
- 1/2 cup chopped onion
- 1/2 cup chopped carrots
- 1/2 cup frozen peas
- 2 eggs, beaten
- 3 tablespoons soy sauce
- 1 teaspoon sesame oil
- Salt and pepper to taste
- Green onions for garnish
Instructions
- Heat vegetable oil in a large skillet or wok over medium heat until shimmering.
- Add chopped onion and carrots, sauté until soft.
- Push the vegetables to the side and pour in the beaten eggs, scrambling until cooked.
- Add the cooked rice and mix everything together, breaking apart any clumps.
- Pour soy sauce and sesame oil over the rice, stirring well to combine.
- Add frozen peas and cook until heated through.
- Season with salt and pepper to taste, garnish with green onions, and serve hot.
Notes
Serve with grilled chicken or steak for extra protein. Leftover rice works best for this recipe.
