Ingredients

- 2 cups cooked brown rice
- 1 cup cooked chicken breast, diced
- 1 cup mixed vegetables (peas, carrots, bell peppers)
- 2 eggs, beaten
- 3 tablespoons soy sauce
- 1 tablespoon sesame oil
- 2 green onions, chopped
- Salt and pepper to taste
Instructions
- Heat sesame oil in a large skillet over medium heat until it shimmers.
- Add the mixed vegetables and stir-fry for 2-3 minutes until tender.
- Push the vegetables to the side of the skillet and add the beaten eggs. Scramble until fully cooked.
- Add the cooked chicken and brown rice to the skillet; mix everything together.
- Pour in the soy sauce and stir well to combine.
- Cook for an additional 2-3 minutes, allowing everything to heat through.
- Season with salt and pepper; stir in chopped green onions before serving.
Notes
Use day-old rice for better texture and feel free to swap in any leftover veggies you have on hand.
