Description

A comforting and nutritious veggie bake, combining fresh vegetables and cottage cheese, making it a family favorite.


Ingredients

  • 2 cups cottage cheese
  • 1 cup broccoli, chopped
  • 1 cup bell pepper, chopped
  • 1 cup zucchini, chopped
  • 1 cup cherry tomatoes, halved
  • 2 cups spinach, chopped
  • 1 red onion, diced
  • 3 large eggs
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 1 teaspoon dried oregano
  • 1 cup shredded mozzarella cheese

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Lightly grease a baking dish with cooking spray or olive oil.
  3. In a large mixing bowl, combine the cottage cheese, broccoli, bell pepper, zucchini, cherry tomatoes, spinach, and red onion. Stir until mixed.
  4. In a separate bowl, whisk together the eggs, olive oil, garlic powder, onion powder, black pepper, salt, and dried oregano.
  5. Pour the egg mixture over the vegetable mixture and stir until evenly coated.
  6. Transfer the mixture into the prepared baking dish and spread it out evenly.
  7. Sprinkle the shredded mozzarella cheese over the top.
  8. Place the dish in the oven and bake for 30-35 minutes or until golden brown and the center is set.
  9. Remove from the oven and let cool slightly before serving.

Notes
