- 2 cups cottage cheese
- 1 cup broccoli, chopped
- 1 cup bell pepper, chopped
- 1 cup zucchini, chopped
- 1 cup cherry tomatoes, halved
- 2 cups spinach, chopped
- 1 red onion, diced
- 3 large eggs
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon black pepper
- 1 teaspoon salt
- 1 teaspoon dried oregano
- 1 cup shredded mozzarella cheese
Instructions
- Preheat your oven to 375°F (190°C).
- Lightly grease a baking dish with cooking spray or olive oil.
- In a large mixing bowl, combine the cottage cheese, broccoli, bell pepper, zucchini, cherry tomatoes, spinach, and red onion. Stir until mixed.
- In a separate bowl, whisk together the eggs, olive oil, garlic powder, onion powder, black pepper, salt, and dried oregano.
- Pour the egg mixture over the vegetable mixture and stir until evenly coated.
- Transfer the mixture into the prepared baking dish and spread it out evenly.
- Sprinkle the shredded mozzarella cheese over the top.
- Place the dish in the oven and bake for 30-35 minutes or until golden brown and the center is set.
- Remove from the oven and let cool slightly before serving.
Notes
Serve with a garden salad or crusty bread. Great for meal prep; leftovers can be stored in the fridge for up to 3 days.
