Description

Ingredients

  • 1 cup granulated sugar
  • 1/2 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1/4 cup water
  • Powdered sugar (for coating)
  • Optional: lavender extract for flavor variation

Instructions

  1. In a saucepan, combine granulated sugar, fresh lemon juice, lemon zest, and water. Stir until the sugar dissolves.
  2. Heat the mixture over medium heat until it reaches the hard crack stage (300°F or 150°C).
  3. Remove from heat and pour the mixture onto a greased baking sheet. Let it cool slightly until it can be handled.
  4. Once cooled but still pliable, cut into small pieces or pour into molds.
  5. Allow to cool completely and coat in powdered sugar to prevent sticking.
  6. Store in an airtight container.

Notes

Use fresh lemons for the best flavor. Monitor the temperature closely to reach the hard crack stage.
