- 1 cup granulated sugar
- 1/2 cup fresh lemon juice
- 1 tablespoon lemon zest
- 1/4 cup water
- Powdered sugar (for coating)
- Optional: lavender extract for flavor variation
Instructions
- In a saucepan, combine granulated sugar, fresh lemon juice, lemon zest, and water. Stir until the sugar dissolves.
- Heat the mixture over medium heat until it reaches the hard crack stage (300°F or 150°C).
- Remove from heat and pour the mixture onto a greased baking sheet. Let it cool slightly until it can be handled.
- Once cooled but still pliable, cut into small pieces or pour into molds.
- Allow to cool completely and coat in powdered sugar to prevent sticking.
- Store in an airtight container.
Notes
Use fresh lemons for the best flavor. Monitor the temperature closely to reach the hard crack stage.
