Description
These Honey Chipotle Chicken Bowls are packed with flavor sweet, smoky, and spicy. A high-protein favorite that’s meal prep and weeknight approved.
Ingredients
1.5 lbs boneless chicken thighs or breasts
2 tbsp olive oil
3 tbsp honey
2 chipotle peppers in adobo sauce (minced)
1 tbsp adobo sauce
1 garlic clove (minced)
Juice of 1 lime
1/2 tsp salt
2 cups cooked rice (white, brown, or cauliflower)
1 cup corn (fresh or frozen)
1 cup black beans (drained and rinsed)
1 avocado, sliced
1/4 cup red onion, chopped
Fresh cilantro and lime wedges for garnish
Instructions
1. In a bowl, whisk together olive oil, honey, minced chipotle peppers, adobo sauce, garlic, lime juice, and salt.
2. Add chicken and marinate for at least 30 minutes (up to 24 hours).
3. Grill or pan-cook the chicken for 6–8 minutes per side until fully cooked.
4. Let chicken rest, then slice into strips.
5. Prepare rice and toppings while chicken cooks.
6. Assemble bowls: layer rice, chicken, corn, black beans, avocado, and red onion.
7. Drizzle with leftover sauce and top with cilantro and lime.
Notes
For extra heat, add more chipotle or chili flakes.
You can swap chicken for tofu or shrimp.
Store ingredients separately if prepping for the week.
