Description

Warm and comforting cookies infused with the rich flavors of chocolate and cozy hot cocoa, studded with mini marshmallows.


Ingredients

  • 1 cup hot cocoa mix
  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup butter, softened
  • 3/4 cup sugar
  • 3/4 cup brown sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 cup mini marshmallows
  • 1 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, cream together the softened butter, sugar, and brown sugar until fluffy.
  3. Beat in the egg and vanilla extract.
  4. In another bowl, whisk together the hot cocoa mix, flour, cocoa powder, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the mini marshmallows and chocolate chips.
  7. Drop spoonfuls of dough onto a lined baking sheet, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes until the edges are set.
  9. Let cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

Store cookies in an airtight container at room temperature for up to a week. Freeze for up to three months, separated by parchment paper.
