Description

This hot honey protein bowl features roasted sweet potatoes, seasoned ground beef, creamy cottage cheese, avocado, and a sweet-spicy hot honey drizzle. High in protein and packed with flavor.


Ingredients

2 medium sweet potatoes, diced

1 lb lean ground beef

1 packet taco seasoning

½ cup cottage cheese

1 avocado, sliced

2 tsp hot honey

1 tbsp olive oil

Salt & pepper to taste


Instructions

1. Preheat oven to 400°F. Toss diced sweet potatoes with olive oil, salt, and paprika. Roast for 25 minutes.

2. Brown ground beef in a skillet. Add taco seasoning and water. Simmer until thickened.

3. Assemble bowl: add sweet potatoes, taco meat, cottage cheese, and avocado.

4. Drizzle hot honey on top. Add toppings if desired.

5. Serve immediately or store in fridge for up to 2 days.

Notes

Use ground chicken or turkey for a leaner option.

Make it dairy-free by substituting with vegan yogurt or cheese.
