Ingredients

- 2 cups all-purpose flour
- 2 tsp baking powder
- 1/2 tsp salt
- 3/4 cup granulated sugar
- 2 large eggs
- 1 cup milk (whole or 2% recommended)
- 1/4 cup oil or melted butter
- 1 tsp vanilla extract
- 1 cup semi-sweet chocolate chips
Instructions
- Preheat your oven to 425°F (220°C).
- Line a muffin pan with paper liners or lightly grease it.
- Whisk the dry ingredients together in a large bowl.
- In another bowl, whisk the wet ingredients.
- Pour the wet mixture into the dry ingredients and stir gently, stopping when a few streaks of flour remain.
- Fold in the chocolate chips, reserving a small handful for topping.
- Scoop the batter into the muffin cups, filling them almost to the top.
- Bake at 425°F for 5 minutes, then reduce the heat to 350°F (175°C) without opening the oven, and bake for an additional 13-16 minutes.
- Cool in the pan for 5 minutes before transferring to a wire rack.
Notes
Use room temperature ingredients for best mixing results. Allow the batter to rest for 10 minutes for better rise.
