- 1 can (15 oz) diced tomatoes

- 1 teaspoon thyme
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions
- In a large pot, heat the olive oil over medium heat until shimmering.
- Add the diced onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and sauté for 30 to 60 seconds until fragrant.
- Pour in the vegetable broth and bring to a boil.
- Add the sliced carrots, chopped celery, and green beans, stirring to combine.
- Add the diced tomatoes with their juice, oregano, thyme, salt, and pepper.
- Lower the heat and let the soup simmer for 20-25 minutes until the vegetables are tender.
- Adjust seasoning if necessary, then serve warm, garnished with chopped parsley.
