Description

A cute Jellycat-inspired birthday cake made with fresh strawberries, fluffy sponge, and soft buttercream bunny design. Perfect for kids’ parties and fans of adorable tårta design.


Ingredients

2 cups all-purpose flour

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1/2 cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 tsp vanilla extract

1 cup fresh strawberry purée

1/2 cup milk

Buttercream frosting (vanilla)

Chocolate chips (for eyes)

Pink fondant (for nose)

Optional: food coloring, edible flowers


Instructions

1. Preheat oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.

2. In a medium bowl, whisk flour, baking powder, baking soda, and salt.

3. In another bowl, cream butter and sugar until light and fluffy. Add eggs one at a time, then vanilla.

4. Alternate adding flour mixture and strawberry purée to the wet ingredients, mixing until just combined. Add milk.

5. Divide batter evenly into pans. Bake for 25–30 minutes or until a toothpick comes out clean.

6. Let cakes cool completely on a wire rack before frosting.

7. Apply a thin crumb coat of buttercream. Chill for 20 minutes.

8. Frost the cake smoothly and use piped buttercream for bunny ears and face. Use chocolate chips for eyes and fondant for the nose.

9. Decorate with edible flowers or pastel sprinkles for a cute finish.

Notes

Use only ripe, fresh strawberries for best flavor.

Chill the cake before decorating for cleaner frosting lines.
