- 8 oz pasta
- 2 cups corn kernels (fresh or frozen)
- 1 red bell pepper, diced
- 1 cup cherry tomatoes, halved
- 1/4 cup red onion, finely chopped
- 1/2 cup cilantro, chopped
- 1 lime, juiced
- 3 tablespoons olive oil
- Salt and pepper to taste
- Optional: Cotija cheese for topping
Instructions
- Cook the pasta according to package directions. Drain and let cool.
- In a large bowl, combine corn, red bell pepper, cherry tomatoes, red onion, and cilantro.
- In a small bowl, whisk together lime juice, olive oil, salt, and pepper to create the dressing.
- Add the cooled pasta to the large bowl and pour dressing on top. Toss well to combine.
- Sprinkle with Cotija cheese if desired.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
For extra flavor, grill the corn before adding it to the salad. Add jalapeños for spice, or black beans for protein. Store leftovers in an airtight container for up to 3 days. Toss before serving to refresh the flavors.
