Ingredients

  • 4 large eggs

  • 1 tablespoon lemon zest
  • Powdered sugar for glazing

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. In a large bowl, mix together the melted butter and sugar until well combined.
  3. Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add this to the wet ingredients along with the lemon juice and zest, mixing until just combined.
  5. Pour the batter into the prepared baking dish and smooth the top.
  6. Bake for about 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  7. Let cool completely before glazing with powdered sugar mixed with a little lemon juice.
  8. Cut into squares and serve.
