Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 2 (8 oz) packages cream cheese, softened
  • 1 cup sugar
  • 1/4 cup all-purpose flour
  • 3 large eggs
  • 1/2 cup sour cream
  • 1/4 cup fresh lemon juice
  • Zest of 1 lemon
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 325°F (165°C).
  2. In a bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Press this mixture into the bottom of a 9-inch springform pan.
  3. In another bowl, beat the softened cream cheese and 1 cup of sugar until smooth. Add the flour and mix well.
  4. Add the eggs one at a time, ensuring to mix well after each addition. Incorporate the sour cream, lemon juice, lemon zest, and vanilla extract, mixing until smooth.
  5. Pour the filling over the crust in the springform pan.
  6. Bake for 55-60 minutes, or until the center is just set.
  7. Remove from the oven and let it cool. Refrigerate for at least 4 hours before serving.

Ensure cream cheese is at room temperature for a smooth mixture. Do not overmix after adding eggs to prevent cracks.
