Ingredients

  • 1 box lemon cake mix
  • 1 (8 oz) package cream cheese, softened
  • 1/2 cup sugar
  • 1/2 cup butter, melted
  • 1 cup lemon curd
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup water
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. In a bowl, mix together the softened cream cheese and sugar until smooth.
  3. In a separate bowl, combine the lemon cake mix, melted butter, eggs, water, and vanilla extract, mixing well.
  4. Spread half of the cake batter into the prepared baking dish.
  5. Spoon the lemon curd over the batter, then dollop the cream cheese mixture on top.
  6. Pour the remaining cake batter over everything evenly.
  7. Bake in the preheated oven for 40-50 minutes or until a toothpick inserted comes out clean.
  8. Let it cool slightly, then serve warm or chilled. Dust with powdered sugar if desired.
