Delightful cookies with a melt-in-your-mouth texture and zesty lemon flavor, perfect for holiday gatherings.


Ingredients

  • 1 cup unsalted butter, softened
  • ½ cup powdered sugar
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • ¼ tsp salt
  • 2 tsp lemon zest
  • 4 oz cream cheese
  • 2 tbsp butter
  • 1½ cups powdered sugar (for filling)
  • 2 tbsp lemon juice
  • ½ tsp lemon zest (for filling)
  • Pinch of salt
  • Extra powdered sugar for coating

Instructions

  1. Beat the cream cheese and 2 tablespoons of butter together until smooth. Mix in 1½ cups of powdered sugar, lemon juice, and lemon zest. Chill the filling in the refrigerator for 30 minutes.
  2. In another bowl, cream together the softened butter and ½ cup of powdered sugar until fluffy. Add vanilla extract and 2 teaspoons of lemon zest. Gradually mix in the flour and salt until well combined.
  3. Take about a tablespoon of the cookie dough, flatten it slightly, place ½ teaspoon of the chilled filling in the center, and then roll it into a ball.
  4. Place the cookie balls on a lined baking sheet and bake in a preheated oven at 350°F (175°C) for 12–14 minutes.
  5. Cool the cookies for 5 minutes on the sheet, then roll them in extra powdered sugar. Allow them to cool completely before rolling them again in powdered sugar for an extra sweet touch.

Notes

Ensure butter and cream cheese are at room temperature for easy mixing. Chill the filling well to keep it from melting during baking.
