- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 egg
- 2 tablespoons fresh lemon juice
- 1 teaspoon lemon zest
- Powdered sugar for rolling
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Whisk together the flour, baking powder, and salt in a bowl.
- Cream the butter and granulated sugar until light and fluffy in a separate bowl.
- Add the egg, lemon juice, and lemon zest, mixing until well combined.
- Gradually add the dry ingredients to the wet mixture and stir until just combined.
- Chill the dough in the refrigerator for about 30 minutes.
- Using a tablespoon, scoop out dough and roll into balls. Roll the balls in powdered sugar until coated.
- Place the dough balls onto the prepared baking sheet, spaced apart.
- Bake for 10-12 minutes or until the edges are set but the centers are still soft.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
For a richer lemon taste, use fresh lemon juice and zest. Store in an airtight container for up to three days.
