- 1 cup almond milk (or any plant-based milk)
- 1/4 cup lemon curd
- 2 tablespoons maple syrup (optional)
- Fresh fruit for topping
- Mint leaves for garnish (optional)
Instructions
- Combine chia seeds and almond milk in a mixing bowl and stir well.
- Add the lemon curd and maple syrup (if using) to the mixture and whisk until combined.
- Let the mixture sit for about 5-10 minutes, then stir again to prevent clumping.
- Cover the bowl and refrigerate for at least 2 hours or overnight until it thickens.
- Serve the chia pudding in bowls topped with fresh fruit and garnish with mint leaves if desired.
