Ingredients

  • 1/4 cup chia seeds
  • 1 cup almond milk (or any plant-based milk)
  • 1/4 cup lemon curd
  • 2 tablespoons maple syrup (optional)
  • Fresh fruit for topping
  • Mint leaves for garnish (optional)

Instructions

  1. Combine chia seeds and almond milk in a mixing bowl and stir well.
  2. Add the lemon curd and maple syrup (if using) to the mixture and whisk until combined.
  3. Let the mixture sit for about 5-10 minutes, then stir again to prevent clumping.
  4. Cover the bowl and refrigerate for at least 2 hours or overnight until it thickens.
  5. Serve the chia pudding in bowls topped with fresh fruit and garnish with mint leaves if desired.
