Ingredients

- 4 cups kale, torn into bite-sized pieces
- 1/4 cup lemon juice
- 2 tablespoons olive oil
- 1/2 cup Parmesan cheese, grated
- 1 clove garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 cup croutons
Instructions
- Tear the kale into bite-sized pieces and place in a large bowl. Remove tough ribs and wash the kale.
- In a small bowl, whisk together the lemon juice, olive oil, minced garlic, salt, and pepper. Taste and adjust if needed.
- Pour the dressing over the kale and massage it into the leaves until well coated, about 1 to 2 minutes.
- Add grated Parmesan cheese and toss to combine.
- Top with croutons and serve immediately.
Notes
Store leftover dressed kale in an airtight container for up to two days. For a different texture, swap croutons with toasted nuts or add seasonal fruits like diced apples.
