Ingredients

  • 1 cup all-purpose flour, sifted
  • 1 tsp baking powder
  • 4 large eggs, room temp
  • ¾ cup granulated sugar
  • 1 tsp vanilla extract
  • 2 tbsp milk, warm
  • 2 tbsp unsalted butter, melted and cooled

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line two 8-inch round cake pans with parchment paper.
  2. In a large bowl, beat eggs and sugar with an electric mixer until pale, thick, and tripled in volume.
  3. Mix in the vanilla extract.
  4. Sift in flour and baking powder, folding gently to retain air.
  5. Stir in the warm milk and melted butter until just combined.
  6. Divide the batter evenly into the prepared pans.
  7. Bake for 20–25 minutes or until golden and springy to the touch.
  8. Let cakes cool in pans for 10 minutes, then transfer to a wire rack to cool completely.

Notes

For best results, use room temperature eggs and sift flour twice. Avoid overmixing to maintain the airy structure.
