- 1 cup dried red beans
- 1 tablespoon vegetable oil
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 1 pound Andouille sausage, sliced
- 4 cups chicken broth
- 2 tablespoons Creole seasoning
- 1 bay leaf
- Salt and pepper to taste
- 4 cups cooked long grain rice
- Chopped green onions for garnish
Instructions
- Soak the red beans overnight in water. Drain and set aside.
- In a large pot, heat the vegetable oil over medium heat. Add the onion, bell pepper, and celery. Cook until the vegetables are soft, about 5 minutes.
- Stir in the garlic and Andouille sausage, cooking for an additional 2-3 minutes.
- Add the soaked beans, chicken broth, Creole seasoning, and bay leaf. Bring to a boil, then reduce heat and let simmer for about 90 to 120 minutes, or until beans are tender.
- Season with salt and pepper to taste.
- Serve the red beans over the cooked rice and garnish with chopped green onions.
Notes
For added heat, consider adding cayenne pepper or hot sauce. You can also use canned red beans to save time.
