Ingredients

  • 2 lbs boneless, skinless chicken breast, cubed
  • 1 block (8 oz) cream cheese, softened
  • 1 cup shredded cheddar cheese (or mozzarella)
  • 1/2 cup chicken broth
  • 2 cups broccoli florets (or other low-carb veggie)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • Optional: chopped spinach, zucchini, or cauliflower as substitutes

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large mixing bowl, combine softened cream cheese, chicken broth, garlic powder, onion powder, paprika, salt, and pepper.
  3. Stir in cubed chicken and broccoli (or chosen vegetables).
  4. Transfer mixture to a greased 9×13 casserole dish.
  5. Top with shredded cheese evenly across the top.
  6. Bake for 25–30 minutes, or until chicken is cooked through and cheese is bubbly and golden.
