- 2 lbs boneless, skinless chicken breast, cubed
- 1 block (8 oz) cream cheese, softened
- 1 cup shredded cheddar cheese (or mozzarella)
- 1/2 cup chicken broth
- 2 cups broccoli florets (or other low-carb veggie)
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon paprika
- Salt and pepper to taste
- Optional: chopped spinach, zucchini, or cauliflower as substitutes
Instructions
- Preheat oven to 375°F (190°C).
- In a large mixing bowl, combine softened cream cheese, chicken broth, garlic powder, onion powder, paprika, salt, and pepper.
- Stir in cubed chicken and broccoli (or chosen vegetables).
- Transfer mixture to a greased 9×13 casserole dish.
- Top with shredded cheese evenly across the top.
- Bake for 25–30 minutes, or until chicken is cooked through and cheese is bubbly and golden.
- Let rest 5 minutes before serving. Garnish with herbs if desired.
Notes
To prevent dryness, avoid overbaking. Store leftovers in the fridge for up to 4 days or freeze for up to 2 months. Reheat in microwave or oven until warmed through.
