A delightful Mango Curd Tart that blends fresh mango and zesty lime, creating a luscious dessert perfect for any occasion.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/4 cup sugar
  • 1/4 tsp salt
  • 1/2 cup chilled, diced unsalted butter
  • 1/4 to 1/2 cup cold water
  • 4 ripe mangoes, pureed
  • 3/4 cup sugar
  • 1/4 cup fresh lime juice
  • 4 large eggs
  • 1/2 cup unsalted butter
  • Whipped cream (for serving)
  • Fresh fruit (for serving)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine flour, sugar, and salt in a mixing bowl.
  3. Cut in the diced butter until the mixture resembles coarse crumbs.
  4. Add cold water one tablespoon at a time, mixing until a dough forms.
  5. Roll out the dough and fit it into a tart pan, pricking the bottom with a fork.
  6. Bake for 10-15 minutes or until lightly golden; then let it cool.
  7. Combine the mango puree, sugar, and lime juice in a saucepan over medium heat.
  8. Whisk in the eggs gradually, stirring until thickened (about 10 minutes).
  9. Remove from heat and stir in the butter until melted and smooth.
  10. Pour the mango curd into the cooled tart shell and chill in the refrigerator for at least 2 hours.
  11. Serve topped with whipped cream or fresh fruit.

Notes

For best flavor, make the mango curd a day in advance. Using fresh mango is recommended for optimal taste.
