- 1/2 cup chilled, diced unsalted butter
- 1/4 to 1/2 cup cold water
- 4 ripe mangoes, pureed
- 3/4 cup sugar
- 1/4 cup fresh lime juice
- 4 large eggs
- 1/2 cup unsalted butter
- Whipped cream (for serving)
- Fresh fruit (for serving)
Instructions
- Preheat your oven to 350°F (175°C).
- Combine flour, sugar, and salt in a mixing bowl.
- Cut in the diced butter until the mixture resembles coarse crumbs.
- Add cold water one tablespoon at a time, mixing until a dough forms.
- Roll out the dough and fit it into a tart pan, pricking the bottom with a fork.
- Bake for 10-15 minutes or until lightly golden; then let it cool.
- Combine the mango puree, sugar, and lime juice in a saucepan over medium heat.
- Whisk in the eggs gradually, stirring until thickened (about 10 minutes).
- Remove from heat and stir in the butter until melted and smooth.
- Pour the mango curd into the cooled tart shell and chill in the refrigerator for at least 2 hours.
- Serve topped with whipped cream or fresh fruit.
Notes
For best flavor, make the mango curd a day in advance. Using fresh mango is recommended for optimal taste.
