A bright, fruity dessert that combines a simple vanilla cake base with a light mango mousse and glossy mango curd, perfect for celebrations and casual gatherings.

- 2 cups vanilla cake mix
- 1 cup milk
- 2 eggs (or egg substitute)
- 1 cup heavy cream
- 1 cup mango puree
- 1/2 cup sugar
- 1 tablespoon gelatin (optional)
- 1 cup mango curd (eggless)
- Fresh mango slices (for garnish)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a cake pan.
- Combine the cake mix, milk, and eggs in a bowl. Mix until smooth and pour into the prepared cake pan.
- Bake for 25-30 minutes or until a toothpick comes out clean. Allow to cool.
- Whip the heavy cream in a separate bowl until soft peaks form.
- Fold in the mango puree and sugar until well combined, adding gelatin if desired.
- Spread the mango mousse over the cooled cake.
- Refrigerate for at least 2 hours to set.
- Spread the eggless mango curd on top after the mousse has set.
- Garnish with fresh mango slices before serving.
Notes
Use ripe mangoes for the puree. A great dessert to make ahead and let the flavors meld together.
