Description

A heartwarming salmon dish with a creamy, tangy sauce that brings families together at the table.


Ingredients

  • 34 salmon fillets, skin removed
  • 2 tbsp olive oil
  • 1 tsp dried basil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp dried thyme
  • 3/4 tsp red pepper flakes
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 cup chicken stock, unsalted
  • 1/2 cup heavy cream
  • 1/3 cup chopped sun-dried tomatoes
  • 5 garlic cloves, minced
  • 1/2 cup freshly shredded parmesan cheese
  • Fresh basil for garnish

Instructions

  1. Combine the seasonings in a small bowl.
  2. Rub half of the seasoning mix into the salmon fillets.
  3. Heat olive oil in a skillet over medium-high heat and sear salmon for about 5 minutes on each side.
  4. Remove salmon and set aside.
  5. Add garlic and sun-dried tomatoes to the skillet, sauté for 1-2 minutes.
  6. Deglaze with chicken stock, scraping up the brown bits, and simmer.
  7. Stir in heavy cream and parmesan cheese, mixing until smooth.
  8. Simmer sauce until thickened, about 10-15 minutes.
  9. Return salmon to skillet, spoon sauce over it, and cook for an additional 3-5 minutes.
  10. Serve hot, garnished with fresh basil.

Notes

For a lighter sauce, substitute heavy cream with half-and-half. Serve with simple sides like roasted asparagus or a green salad for a complete meal.
