Description

A quick and colorful Mediterranean Chicken Stir Fry that balances bright, salty, and savory flavors, perfect for family dinners.


Ingredients

  • 1.5 lbs Chicken breasts, boneless & skinless (Cut into bite-sized pieces)
  • 3 tbsp Extra virgin olive oil (Divided for cooking)
  • Salt & black pepper (To taste)
  • 2 medium Zucchini (Sliced into half-moons)
  • 2 Red bell peppers (Diced into chunks)
  • 1 large Red onion (Sliced into strips)
  • 2 cups Cherry tomatoes (Halved)
  • 1 cup Kalamata olives (Pitted and halved)
  • 4 cloves Garlic (Minced)
  • 1/4 cup Sun-dried tomatoes (Chopped)
  • 2 tsp Dried oregano
  • 1 tsp Dried basil
  • 1/2 tsp Dried thyme
  • 1 Lemon (Juice only)
  • 0.5 cup Feta cheese (Crumbled)
  • 2 tbsp Fresh parsley (Optional garnish)

Instructions

  1. Measure out herbs, chop the vegetables, and cut the chicken into bite-sized pieces.
  2. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add chicken pieces, season with salt and pepper, and cook until golden, about 5–7 minutes.
  3. Remove chicken and add the remaining 1 tablespoon olive oil to the pan. Sauté the red onion until soft, add garlic, zucchini, and bell pepper, and cook 4–6 minutes.
  4. Return the chicken to the pan, add dried oregano, basil, and thyme, and toss to combine. Stir in cherry tomatoes and sun-dried tomatoes and cook until tomatoes begin to soften.
  5. Squeeze the lemon over the pan, stir in the Kalamata olives, and sprinkle crumbled feta on top. Finish with chopped fresh parsley if you like, then serve immediately.

Notes

Don’t skip the fresh herbs; they elevate the dish’s flavor. If you’re short on time, keep ingredients like sun-dried tomatoes and olives prepped in the fridge.
