Description
A vibrant and wholesome one-pan Mediterranean chicken zucchini bake loaded with lean protein, fresh vegetables, olive oil, and herbs. Perfect for busy weeknights or healthy meal prep.
Ingredients

- 2 medium zucchinis, sliced into thin rounds
- 2 boneless, skinless chicken breasts
- 1 cup cherry tomatoes
- 1 small red onion, sliced
- 4 cloves garlic, whole or smashed
- 2 tbsp olive oil
- 1/2 tsp dried oregano
- 1/2 tsp dried thyme
- Salt and black pepper, to taste
- 1/4 cup crumbled feta (optional)
- Chopped fresh basil or parsley, for garnish
Instructions
- Preheat oven to 400°F (200°C).
- Layer sliced zucchini in a baking dish.
- Season chicken breasts with salt, pepper, oregano, and thyme. Place on top of zucchini.
- Add cherry tomatoes, garlic cloves, and onion slices around the chicken.
- Drizzle everything with olive oil. Top with feta, if using.
- Bake uncovered for 30–35 minutes, or until chicken reaches 165°F internal temperature and vegetables are tender.
- Remove from oven and sprinkle with chopped fresh basil or parsley before serving.
Notes
Use a mix of yellow squash and zucchini for variety. Salt zucchini lightly and let sit for 10 minutes before baking to avoid excess moisture. Great served with quinoa, couscous, or crusty bread.
