Description

A delightful dish combining fresh flavors and healthy ingredients, featuring seared salmon served over a bed of lemon-infused orzo pasta.


Ingredients

  • 4 salmon fillets
  • 1 cup orzo pasta
  • 2 cups vegetable broth or water
  • 1 lemon (zested and juiced)
  • 2 tablespoons olive oil
  • 2 cloves garlic (minced)
  • 1 cup cherry tomatoes (halved)
  • 1/4 cup fresh parsley (chopped)
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium heat. Season the salmon with salt and pepper. Sear for about 5-7 minutes per side, or until cooked to your liking. Remove from the skillet and set aside.
  2. In the same skillet, add garlic and cherry tomatoes. Sauté for 2-3 minutes.
  3. Add orzo, vegetable broth, lemon juice, and lemon zest to the skillet. Bring to a boil, then reduce heat, cover, and let simmer until the orzo is cooked, about 8-10 minutes.
  4. Stir in chopped parsley and adjust seasoning as needed.
  5. Serve the cooked orzo topped with the seared salmon.

Notes

For added flavor, marinate the salmon in lemon juice for 30 minutes before cooking. Substitute orzo with quinoa or farro for a different texture.
