Ingredients

  • 1 head romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cup corn, fresh or canned
  • 1 cup black beans, rinsed and drained
  • 1 red bell pepper, diced
  • 1 avocado, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup cilantro, chopped
  • Juice of 2 limes
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the chopped lettuce, cherry tomatoes, corn, black beans, red bell pepper, avocado, red onion, and cilantro.
  2. Use a big bowl so you can toss without spilling. A salad that breathes tastes brighter.
  3. In a small bowl, whisk together the lime juice, olive oil, salt, and pepper.
