- 8 oz cream cheese, softened
- 1/2 cup granulated sugar
- 1 tsp vanilla extract
- 2 large eggs
- 1 cup sour cream
- 1/2 cup graham cracker crumbs
- 1/4 cup butter, melted

Instructions
- Preheat the oven to 325°F (160°C).
- Combine graham cracker crumbs and melted butter in a mixing bowl, then press the mixture into the bottom of mini cheesecake cups.
- Beat the softened cream cheese with sugar and vanilla until smooth.
- Add eggs one at a time, mixing well after each addition.
- Fold in the sour cream until combined.
- Pour the cream cheese mixture over the crusts in the mini cups.
- Bake for about 15-20 minutes, or until set.
- Cool, then refrigerate for at least 2 hours.
- Serve with your favorite toppings.
Notes
