Description
A simple and delicious moist banana bread that uses ripe bananas and common pantry items, resulting in a soft and sweet loaf.

- 1 3/4 cups (220 g) all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup (115 g) unsalted butter, melted and cooled
- 3/4 cup (150 g) granulated sugar
- 2 large eggs, room temperature
- 1 teaspoon vanilla extract
- 3 ripe bananas, mashed (about 1 1/2 cups)
- 1/4 cup milk (or yogurt)
- Optional: 1/2 cup chopped nuts or chocolate chips
Instructions
- Preheat oven to 350°F (175°C). Grease a 9 x 5 inch loaf pan and set aside.
- In a bowl, whisk together flour, baking soda, and salt.
- In another bowl, mix melted butter and sugar. Add eggs one at a time, then stir in vanilla.
- Add mashed bananas and milk to the wet mix and stir until smooth.
- Add dry ingredients to wet mixture and stir until just combined. Fold in nuts or chips if using.
- Pour batter into the prepared pan and smooth the top.
- Bake for 50–60 minutes, or until a toothpick in the center comes out clean.
- Let cool in the pan for 10 minutes, then remove to a rack to cool further.
Notes
Use very ripe bananas with brown spots for the best sweetness and moisture. Wrap the cooled loaf in plastic wrap or place in an airtight container for storage.
