A soft, tender loaf filled with ripe bananas, sour cream, and butter, perfect for any time of day!
Ingredients

- 3 ripe bananas, mashed
- 1/2 cup sour cream
- 1/2 cup melted butter
- 1 cup sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 cups all-purpose flour
- 1/2 cup chopped walnuts (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan.
- In a mixing bowl, combine the mashed bananas, sour cream, and melted butter.
- Mix in the sugar, eggs, and vanilla extract until well combined.
- In another bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Fold in the chopped walnuts if using.
- Pour the batter into the prepared loaf pan.
- Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool for 10 minutes before transferring to a wire rack to cool completely.
Notes
For the sweetest flavor, use very ripe bananas. Store leftovers in an airtight container for up to three days.
