Ingredients

- 2 cups milk
- 1/2 cup granulated sugar
- 1/3 cup cornstarch
- 1/4 teaspoon salt
- 2 large egg yolks
- 2 tablespoons unsalted butter
- 1 tablespoon vanilla extract
- 4 ripe bananas, sliced
- 1 box vanilla wafers
- whipped cream (optional for topping)
Instructions
- In a medium saucepan, whisk together the milk, sugar, cornstarch, and salt over medium heat until it thickens.
- In a separate bowl, beat the egg yolks. Slowly add a bit of the hot milk mixture to the yolks to temper them, then return everything to the saucepan.
- Cook for another 2-3 minutes until thickened. Remove from heat and stir in the butter and vanilla extract.
- In a serving dish, layer vanilla wafers, sliced bananas, and the pudding mixture.
- Repeat the layers until all ingredients are used, ending with pudding on top.
- Chill for at least 2 hours in the refrigerator. Serve with whipped cream if desired.
Notes
Use ripe bananas for the best flavor. To avoid lumps, whisk continuously while cooking.
