- 2 cups cooked rice
- 1/4 cup ketchup
- 2 eggs
- 1 medium onion, chopped
- 1 cup cooked chicken, diced (optional)
- 1/2 cup peas (optional)
- Salt, to taste
- Pepper, to taste
- 2 tablespoons butter
Instructions
- Cook the rice according to package instructions and set aside.
- In a pan, melt butter and sauté chopped onions until translucent.
- Add cooked rice, ketchup, salt, and pepper. Mix well and cook for a few minutes.
- In a separate bowl, whisk the eggs and season with salt.
- In another pan, heat some butter and pour in the eggs, swirling to create a fluffy omelet.
- Once the eggs are almost set, place the ketchup fried rice on one half of the omelet and fold the other half over.
- Serve hot, garnished with extra ketchup, if desired.
Notes
Use day-old rice for better texture. Customize the filling with other vegetables or proteins.
