Ingredients

  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup diced tomatoes with green chilies
  • 1 tablespoon taco seasoning
  • 2 cups vegetable broth or water
  • 1 cup diced bell peppers
  • 1 tablespoon olive oil
  • 1 cup diced avocado (for topping)
  • Fresh cilantro (for garnish)

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced bell peppers and sauté until softened, about 3-4 minutes.
  3. Stir in the rice, black beans, corn, tomatoes, taco seasoning, and vegetable broth.
