Ingredients

- 1 cup vegan or regular mayonnaise
- 2 tsp dijon mustard
- 3 garlic cloves (minced or grated)
- 1/2 cup grated regular or vegan parmesan cheese
- 1 tsp vegan or regular Worcestershire sauce
- 3 tbsp lemon juice
- 2 tbsp olive oil (optional)
- 1/2 tsp sea salt
- 1/2 tsp black pepper
Instructions
- Into a small bowl, add all the ingredients and whisk together till completely combined and smooth.
- Use a flat whisk or fork and steady pressure. The mixture should look glossy.
- If you want it thinner, add a teaspoon of water or olive oil at a time.
- Do a quick taste test and see if you need to add anything to meet your dressing flavor needs.
- Taste for lemon and salt first. Add more lemon for brightness or a pinch of salt to lift the flavors.
- If it tastes flat, a tiny extra splash of Worcestershire will help.
- Transfer to a jar and enjoy on an as-needed basis.
- Store in the fridge for up to a week in a sealed jar.
- Give it a good stir before using if it separates a bit.
Notes
Let the garlic sit in the dressing for a few minutes if you want the flavor to mellow. To involve kids, let them whisk the jar closed and shake.
