- 1 lb Fresh asparagus
- 1/2 cup Parmesan cheese, shaved or grated
- 1 cup Juicy tomatoes, diced
- 2 cloves Garlic, minced
- 2 tbsp Balsamic glaze
- 2 tbsp Olive oil
- 1 tsp Salt
- 1/2 tsp Pepper
- Optional: Chopped parsley or basil for garnish
- Optional: Pinch of red pepper flakes for heat
Instructions
- Preheat the oven to 400°F (200°C).
- Trim the ends of the asparagus and place them on a baking sheet.
- Drizzle with olive oil and sprinkle with salt and pepper.
- Add shaved Parmesan cheese, diced tomatoes, and minced garlic on top of the asparagus.
- Roast in the preheated oven for 15-20 minutes or until tender.
- Drizzle with balsamic glaze before serving.
Notes
For added flavor, sprinkle with lemon zest after roasting. Store leftovers in an airtight container for up to 3 days.
