Description

A simple and delicious dish featuring roasted asparagus topped with crispy Parmesan cheese, perfect for family gatherings.


Ingredients

  • 1 lb Fresh asparagus
  • 1/2 cup Parmesan cheese, shaved or grated
  • 1 cup Juicy tomatoes, diced
  • 2 cloves Garlic, minced
  • 2 tbsp Balsamic glaze
  • 2 tbsp Olive oil
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • Optional: Chopped parsley or basil for garnish
  • Optional: Pinch of red pepper flakes for heat

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Trim the ends of the asparagus and place them on a baking sheet.
  3. Drizzle with olive oil and sprinkle with salt and pepper.
  4. Add shaved Parmesan cheese, diced tomatoes, and minced garlic on top of the asparagus.
  5. Roast in the preheated oven for 15-20 minutes or until tender.
  6. Drizzle with balsamic glaze before serving.

Notes

For added flavor, sprinkle with lemon zest after roasting. Store leftovers in an airtight container for up to 3 days.
