Ingredients
- 1 ½ cups all-purpose flour

Instructions
- Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
- In a medium bowl, whisk flour, sugar, salt, and baking powder.
- In another bowl, whisk oil, egg, milk, and vanilla until smooth.
- Pour wet ingredients into dry and stir until just combined. Do not overmix.
- Gently fold in blueberries.
- Divide batter evenly among 12 muffin cups. Sprinkle with coarse sugar if desired.
- Bake for 20–25 minutes or until a toothpick comes out clean.
- Cool in the pan for 5 minutes, then transfer to a wire rack.
Notes
