- 1 1/3 cups all-purpose flour
- 1 cup granulated sugar
- 1 tsp baking soda
- 3/4 tsp table salt
- 1/2 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 cup vegetable oil
- 2 large eggs
- 1/3 cup water
- 1 cup canned pumpkin puree
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan lightly.
- In a large bowl, mix together the flour, sugar, baking soda, salt, cinnamon, and nutmeg.
- In another bowl, whisk together the vegetable oil, eggs, water, and pumpkin puree until smooth.
- Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Do not overmix.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for about 60–70 minutes or until a toothpick inserted in the center comes out clean.
- Let the bread cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
Notes
Use fresh spices and avoid overmixing for a tender crumb. Add nuts, raisins, or chocolate chips for texture. For a lighter loaf, swap half the oil with applesauce.
