Description

Pumpkin Bread is soft, moist, and full of cozy fall flavors. With warm spices and rich pumpkin puree, this easy recipe makes the perfect breakfast, snack, or dessert any time of year.


Ingredients

  • 1 1/3 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tsp baking soda
  • 3/4 tsp table salt
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1/3 cup water
  • 1 cup canned pumpkin puree

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan lightly.
  2. In a large bowl, mix together the flour, sugar, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, whisk together the vegetable oil, eggs, water, and pumpkin puree until smooth.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Do not overmix.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for about 60–70 minutes or until a toothpick inserted in the center comes out clean.
  7. Let the bread cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.

Notes

Use fresh spices and avoid overmixing for a tender crumb. Add nuts, raisins, or chocolate chips for texture. For a lighter loaf, swap half the oil with applesauce.
