- 2 flatbreads or naan
- 1 cup cooked chicken, shredded or chopped
- 1/3 cup basil pesto
- 1 cup shredded mozzarella cheese
- 1/2 cup cherry tomatoes, halved
- 1/4 cup baby spinach or arugula
- 1 tablespoon olive oil
- Salt and black pepper, to taste
- Optional: crushed red pepper flakes or grated Parmesan
Instructions
- Preheat oven to 400°F (200°C).
- Place flatbreads on a baking sheet. Brush lightly with olive oil.
- Spread a generous layer of pesto over each flatbread.
- Top with cooked chicken, mozzarella cheese, tomatoes, and spinach.
- Season with salt, pepper, and optional red pepper flakes.
- Bake for 10–12 minutes, or until cheese is melted and edges are golden and crisp.
- Remove from oven, slice, and serve immediately.
Notes
To make this healthier, use whole grain flatbread, low fat cheese, and load it with extra veggies. Great for meal prep just assemble ahead and bake fresh when needed.
