- 1 cup pumpkin puree (not pumpkin pie filling)
- 2 large eggs
- 1/2 cup vegetable oil or melted butter
- 1 cup granulated sugar (or brown sugar for richer flavor)
- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/8 tsp ground cloves
- Optional: chocolate chips, cream cheese swirl, or cinnamon sugar topping
Instructions
- Preheat oven to 350°F (175°C). Grease a standard loaf pan.
- In a large bowl, whisk together pumpkin puree, eggs, oil (or butter), and sugar until well combined.
- Add flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves.
- Gently fold dry ingredients into wet until just combined. Do not overmix.
- Pour batter into the prepared loaf pan and smooth the top.
- Bake for 55–65 minutes or until a toothpick inserted into the center comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
Wrap tightly and store at room temperature for up to 4 days or freeze individual slices for up to 2 months. Add-ins like chocolate chips or a cream cheese swirl make it extra special.
