  • 2 large eggs
  • 1/2 cup vegetable oil or melted butter
  • 1 cup granulated sugar (or brown sugar for richer flavor)
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/8 tsp ground cloves
  • Optional: chocolate chips, cream cheese swirl, or cinnamon sugar topping

Instructions

  1. Preheat oven to 350°F (175°C). Grease a standard loaf pan.
  2. In a large bowl, whisk together pumpkin puree, eggs, oil (or butter), and sugar until well combined.
  3. Add flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves.
  4. Gently fold dry ingredients into wet until just combined. Do not overmix.
  5. Pour batter into the prepared loaf pan and smooth the top.
  6. Bake for 55–65 minutes or until a toothpick inserted into the center comes out clean.
  7. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
