- 2 cups cooked rice
- 2 tablespoons vegetable oil
- 1 cup mixed vegetables (carrots, peas, corn)
- 2 eggs, beaten
- 3 green onions, chopped
- 3 tablespoons soy sauce
- Salt and pepper to taste
Instructions
- Heat vegetable oil in a large pan or wok over medium-high heat.
- Add mixed vegetables and stir-fry for 2-3 minutes until tender.
- Push the vegetables to the side of the pan and add the beaten eggs. Scramble until fully cooked.
- Add the cooked rice to the pan, mixing everything together.
- Pour soy sauce over the mixture and stir until evenly coated.
- Add chopped green onions, season with salt and pepper, and mix well.
- Cook for an additional 2-3 minutes, then serve hot.
Notes
Use cold leftover rice for the best texture. Feel free to customize with any leftover vegetables or proteins.
