Description

A simple and comforting fried rice recipe that brings the family together with quick prep and delightful flavors.


Ingredients

  • 2 cups cooked rice
  • 2 tablespoons vegetable oil
  • 1 cup mixed vegetables (carrots, peas, corn)
  • 2 eggs, beaten
  • 3 green onions, chopped
  • 3 tablespoons soy sauce
  • Salt and pepper to taste

Instructions

  1. Heat vegetable oil in a large pan or wok over medium-high heat.
  2. Add mixed vegetables and stir-fry for 2-3 minutes until tender.
  3. Push the vegetables to the side of the pan and add the beaten eggs. Scramble until fully cooked.
  4. Add the cooked rice to the pan, mixing everything together.
  5. Pour soy sauce over the mixture and stir until evenly coated.
  6. Add chopped green onions, season with salt and pepper, and mix well.
  7. Cook for an additional 2-3 minutes, then serve hot.

Notes

Use cold leftover rice for the best texture. Feel free to customize with any leftover vegetables or proteins.
