Description

Ingredients

  • 1 to 1.5 pounds boneless chicken thighs or breast, cut into bite size pieces
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 small onion, diced (optional)
  • 1 cup uncooked white rice (or jasmine)
  • 2 cups low sodium chicken broth
  • 1 to 2 cups chopped veggies (broccoli, spinach, peas, or zucchini)
  • 1 lemon (zest and juice)
  • Salt, pepper, and Italian seasoning to taste

Instructions

  1. Heat olive oil in a big pot over medium heat.
  2. Add chicken, salt, pepper, and a pinch of Italian seasoning; brown for a few minutes.
  3. Toss in onion and garlic, stirring for about a minute.
  4. Add rice and stir to coat it in the oil and flavor.
  5. Pour in chicken broth and bring to a gentle simmer.
  6. Cover and cook on low for about 15 minutes.
  7. Add your veggies during the last 5 minutes to avoid overcooking.
  8. Turn off the heat, add lemon zest and juice, and let sit covered for 5 minutes.
  9. Fluff and taste for salt before serving.
