Description

A delightful and nutritious Raspberry Chia Pudding, perfect for breakfast or dessert, combining fresh raspberries and chia seeds sweetened with maple syrup.


Ingredients

  • 1/4 cup chia seeds
  • 1 cup unsweetened almond milk (or milk of your choice)
  • 2 tablespoons pure maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/2 cup fresh or frozen raspberries (plus more for topping)
  • Sliced almonds or chopped nuts
  • Shredded coconut
  • Additional raspberries or mixed berries
  • Extra drizzle of maple syrup

Instructions

  1. In a medium bowl, combine the chia seeds, almond milk, pure maple syrup, and vanilla extract. Stir everything together until there are no clumps.
  2. In a small bowl, lightly mash the raspberries. If using frozen berries, allow them to thaw slightly before mashing.
  3. Pour the chia mixture into a larger bowl or jar and gently fold in the mashed raspberries. Cover and refrigerate for at least an hour, or overnight.
  4. Once thickened, layer the pudding into bowls, garnish with additional raspberries, nuts, and a drizzle of maple syrup.

Notes

This pudding can keep well in the fridge for up to five days. Serve fresh or warm it up slightly if desired.
