Description

A moist and tender red velvet cake filled with a tangy cream cheese surprise, perfect for gatherings and celebrations.


Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup vegetable oil
  • 1 cup buttermilk, room temperature
  • 2 large eggs, room temperature
  • 2 tablespoons red food coloring
  • 1 teaspoon vanilla extract
  • For the cream cheese filling:
  • 8 oz cream cheese
  • 1/2 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • For the cream cheese frosting:
  • 8 oz cream cheese
  • 1/2 cup butter
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a bundt pan.
  2. In a large mixing bowl, combine flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, mix oil, buttermilk, eggs, food coloring, and vanilla.
  4. Combine the wet and dry ingredients, mixing until just combined.
  5. Pour half of the batter into the prepared bundt pan.
  6. Mix the cream cheese filling ingredients and layer it on top of the batter.
  7. Pour the remaining batter over the cream cheese filling and smooth the top.
  8. Bake for 50-60 minutes or until a toothpick comes out clean.
  9. Let cool before removing from the pan.
  10. Prepare the cream cheese frosting by mixing all frosting ingredients until smooth, then frost the cooled bundt cake.

Notes

For a lighter version, use half the oil and replace with applesauce. Store in an airtight container in the refrigerator for up to 4 days or freeze individual slices.
