- Cheesecake Layer:
- 24 oz cream cheese, room temp
- ¾ cup sugar
- ⅓ cup sour cream
- 2 tsp vanilla extract
- 3 large eggs
- Red Velvet Cake Layers:
- 2 ½ cups all-purpose flour
- 2 tbsp cocoa powder
- 1 ½ cups sugar
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp salt
- 2 large eggs
- 1 ¼ cups buttermilk
- 1 cup neutral oil
- 1 tbsp vinegar
- 2 tsp vanilla extract
- 2–3 tsp red food coloring
- Cream Cheese Frosting:
- 8 oz cream cheese, softened
- ½ cup butter, softened
- 3 ½ cups powdered sugar
- 1 tsp vanilla extract
- Topping:
- 1 lb fresh strawberries, halved
- 2 tbsp warmed strawberry or apricot jam (optional glaze)
Instructions
- Preheat oven to 325°F. Beat cream cheese, sugar, sour cream, vanilla, and eggs until smooth. Bake in a water bath for 50 minutes. Chill completely.
- Preheat oven to 350°F. In separate bowls, mix dry and wet cake ingredients. Combine, divide into two pans, and bake 25 minutes. Cool layers completely.
- Beat cream cheese and butter. Gradually add powdered sugar and vanilla. Mix until smooth and spreadable.
- Place one red velvet cake layer on a plate, add cheesecake layer, then top with second cake layer. Frost top and sides evenly.
- Top with halved strawberries and brush with jam for a glossy finish. Chill before slicing.
Notes
Chill all layers before assembling. Use gel food coloring for vibrant color. Brush strawberries with jam to keep them fresh and shiny.
