- 4 Roma tomatoes or 1 can fire-roasted tomatoes
- 1 jalapeño or serrano pepper (adjust for spice)
- 1 small onion, peeled and halved
- 2 cloves garlic, unpeeled
- 1/2 cup fresh cilantro
- Juice of 1 lime
- Salt to taste
Instructions
- Roast the tomatoes, pepper, onion, and garlic in a skillet or under the broiler until charred.
- Peel the garlic once cooled.
- Place all roasted vegetables in a blender or food processor.
- Add cilantro, lime juice, and salt.
- Blend until smooth or leave slightly chunky, depending on your preference.
- Taste and adjust salt, lime, or spice level as needed.
